After spending a week up north with wonderful family, we are thankful to be home to our little family of three (make that four, with baby boy due in April.) Driving the I-95 corridor with a 20 month old on New Years Eve put me going to bed at 9:30 p.m., so I woke up quite rested for the first day of 2011. With bare cabinets and just enough milk to make waffles, I used this great recipe. We just finished the leftovers tonight with fresh fruit and whipping cream on top! Sorry, no photos.
1 1/2 cups whole wheat flour, white whole wheat or traditional (I used white whole wheat)
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 large egg
1 1/2 cups milk
1/3 cup melted butter
Whisk together the flour, baking powder, salt, and sugar. In a separate bowl, whisk together the egg, milk, and butter. Mix together the wet and dry ingredients, stirring just till combined.
Cook the waffles as directed in the instructions that came with your waffle iron.
Yield: about eight 8″ waffles.
